I’m going to assume you’ve already thought about the negative aspects of sending sensor data this way, because that would be your first step. But I’m also assuming you’ve determined that it is not an option you want to pursue in this case. If that is the case, then my initial impression is you should be looking elsewhere for the buck-cost/cost-improvement. I mean, we’re not used to looking for $5 sensors that far from the cost of the main unit. Most of the sensor prices you mention aren’t that much less than the total cost, especially if you buy a lot of them.
When I look at the specification for the ESP8266 I see a lot of wasted wiring capacity. It has an almost-unqualified ability to handle 4-5 times the amount of data you’re talking about (I’m not suggesting that it cannot – it is a very sturdy device) at a cost that doesn’t remotely justify the intended use. It has some extremely well-established support for one-wire protocols such as I2C, but I2C is not capable of the throughput you are describing. It also has the ability to drive a display – but the addressable resolution is limited. Lastly, I2C also is limited to addresses 0-7, so again that’s not enough capacity to support the volume of data you are describing.
So I’m a bit surprised that you think you’d get any kind of performance out of an ESP8266 in your use case. Especially if you have a microcontroller that supports SPI and that is more than capable of handling the I2C data flow without any problem.
I can also see why you might be considering using a Raspberry Pi (I don’t have any experience with it myself) given the price and the cost/performance ratio. But since we’re already recommending a microcontroller that could be used

You can also get away from all the typing and build your circuits using circuit simulator (ESP8266 or Arduino included), or use Arduino and/or ESP8266 to build your circuits.
In general the hardest part about electronics, is if you have a circuit idea, you’ll be pretty close to figuring it out, the first thing you need to do is build a circuit and test it.
I would consider what you want your circuit to do and try and find ways to do it with less components. If you want something complicated, start small. If you want something simple, start small.
